VNC Server off when I log off

You can't. The free version does not support user switching or RDP. You 
must either purchase the Personal or Enterprise editions of RealVNC, or 
use the free edition of UltraVNC. But, because you are using XP Pro, I 
suggest you forgo VNC and use RDP instead.
