Color level always sets automatically to "Full"

The behaviour you describe is by-design. The VNC Viewer Options available
once a connection has been made are per-connection. You can make the
settings you have configured for a connection persistent either by saving a
Connection Info (.vnc) file, or by saving them as the defaults to use for
new viewers.
In general, though, you should not need to disable Auto-select - what is the
Line Speed Estimate listed in the Connection Info for the connection when it
is switched into full-colour mode?
